Nevis chef wins 7th Annual International Foodservice Competition
Oualie Beach Resort’s executive chef Jason Bishop takes top award
Charlestown, Nevis (August 8th, 2006) – Executive chef Jason Bishop from the Oualie Beach Resort on the island of Nevis recently took first place honours in the 7th International Foodservice Competition, held in Mexico City on August 2 at the famous Le Cordon Bleu cooking school.
“Chef Jason’s winning performance is proof positive that the little island of Nevis and Oualie Beach Resort can compete successfully against the world’s best eating establishments. We look forward to him leading a team of Nevis chefs to the Taste of The Caribbean competition sponsored by the Caribbean Hotel Association in June 2007,” says John Yearwood, managing director of the Oualie Beach Resort.
Competing chefs were required to use readily available ingredients from the island and cooking styles that could easily be repeated in Caribbean kitchens. Chef Jason entered two original “home chef” recipes: beef bottom sirloin tri-tip and pork loin roast/chops.
Moments before the contest began, the chefs were assigned one of their two entered recipes and allowed a maximum preparation time of two hours. Chef Jason prepared the Carib beer-marinated beef bottom tri-tip with charred tomato salsa accompanied by local pumpkin slaw and christophene (a Caribbean squash). All the finalists were evaluated by a panel of five judges on the merits of originality, versatility and the ease of adaptability to a home Caribbean cook, as well as the kitchen skills and sanitation of the competing chef. Chef Jason’s winning recipe will be used in various promotions this coming year and will also be featured in a consumer publication to be developed by the US Meat Export Federation, sponsors of the competition.
In addition to a $1000 cash award, Chef Jason will receive a nine-day, all-expenses paid trip to tour major venues in the food, wine and meat industries within the United States. He will be on tour from September 19-27, 2006, with stops in New York City, San Francisco and Napa Valley where he will dine at some of America’s best restaurants and tour numerous vineyards and wineries. Chef Jason will conclude his whirlwind tour with two days of classes at the world-famous Culinary Institute of America’s Greystone Campus in Napa Valley studying Asian and Spanish cuisines. For this native Californian, it will be a dream come true and the culmination of many years of hard work in the field of culinary arts.
As to his reaction to winning the culinary championship, Chef Jason comments, “This experience has given me an exceptional opportunity to exchange ideas with other talented Caribbean and Mexican chefs. I plan to share these ideas with our Nevis chefs in order to forge a formidable Nevisian team which can compete internationally. I also look forward to working closely with our Agricultural Department on how to raise the standard of local meat production on Nevis.”
